Ingredients:
* 1 whole chicken, cut into pieces
* 1 cup buttermilk
* 1/2 cup all-purpose flour
* 1/4 cup cornstarch
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1/2 teaspoon paprika
* 1/4 teaspoon garlic powder
* 1/4 teaspoon onion powder
* 1/4 teaspoon cayenne pepper
* Vegetable oil, for frying
Instructions:
1. In a large bowl, combine the chicken and buttermilk. Cover the bowl and refrigerate for at least 4 hours, or overnight.
2. In a shallow dish, whisk together the flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
3. Remove the chicken from the buttermilk and dredge it in the flour mixture.
4. Heat a large cast iron skillet over medium-high heat. Add enough vegetable oil to coat the bottom of the skillet.
5. Fry the chicken in the hot oil for 8-10 minutes per side, or until golden brown and cooked through.
6. Serve hot with your favorite sides.
