Ingredients:
  • For the pastry:
    • All-purpose flour, 2 cups
    • Sugar, 1/2 cup
    • Salt, 1/4 teaspoon
    • Cold butter, 1 cup (2 sticks)
  • For the filling:
    • Lotus seed paste, 1 cup
    • Black sesame paste, 1/2 cup
    • White bean paste, 1/2 cup
    • Sugar, 1/4 cup
    • Corn oil, 1/4 cup
Instructions:
1. To make the pastry, combine the flour, sugar, salt, and butter in a large bowl. Use your hands to work the ingredients together until the mixture resembles coarse crumbs.
2. Add 1/4 cup of cold water and mix until the dough just comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
3. To make the filling, combine the lotus seed paste, black sesame paste, white bean paste, sugar, and corn oil in a medium bowl. Mix until the filling is smooth and well combined.
4. Preheat oven to 350 degrees F (175 degrees C).
5. On a lightly floured surface, roll out the dough to a 12-inch circle. Cut out 12 circles from the dough using a 3-inch cookie cutter.
6. Place a dollop of filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal.
7. Place the mooncakes on a baking sheet and bake for 15-20 minutes, or until the pastry is golden brown.
8. Let the mooncakes cool completely before serving.
