Harissa




Harissa is a bright red or orange-coloured hot sauce that is widely used in Middle Eastern and North African cuisines. The sauce is made from a blend of roasted bell peppers, cumin, coriander, and cayenne peppers. Harissa has a slightly smoky flavor with a kick. It is often used as a condiment or marinade for meats, poultry, and seafood. Harissa can also be added to soups, stews, and sauces to add a bit of spice.
I first tried harissa when I was on a trip to Morocco. I was at a local market when I saw a woman making harissa from scratch. She showed me how she roasted the bell peppers and then ground them up with the other spices. The sauce looked so delicious that I decided to buy some to take home with me.
I've been using harissa ever since and I love it! I add it to all sorts of dishes, from grilled chicken to roasted vegetables. I even use it in my homemade hummus.

Here's a simple recipe for harissa:
Ingredients:
* 1 red bell pepper, seeded and chopped
* 1 orange bell pepper, seeded and chopped
* 1 clove garlic, minced
* 1 teaspoon cumin
* 1 teaspoon coriander
* 1/2 teaspoon cayenne pepper
* 1/4 teaspoon salt
* 1/4 cup olive oil
Instructions:
1. Preheat oven to 400 degrees F (200 degrees C).
2. Place the bell peppers and garlic on a baking sheet. Drizzle with olive oil and sprinkle with cumin, coriander, cayenne pepper, and salt.
3. Roast in the preheated oven for 20-25 minutes, or until the bell peppers are soft and charred.
4. Remove from the oven and let cool.
5. Transfer the roasted bell peppers, garlic, and spices to a blender or food processor. Puree until smooth.
6. Add more olive oil if needed to reach desired consistency.
