As I strolled through the ancient Mayan ruins of Chichén Itzá, I couldn't help but wonder what the indigenous people might have eaten in this sacred place. To my delight, I discovered that the region's cuisine is just as vibrant and flavorful as its history.
In Mérida, the capital of Yucatán, I indulged in the traditional dish of cochinita pibil, a succulent pork dish slow-roasted in banana leaves and flavored with achiote paste. The meat was so tender, it melted in my mouth, and the flavors were simply divine.
