Recipe: Angelo Pandeli




Author's Note: I was born and raised in a small town in Italy, and my grandmother was an incredible cook. She would spend hours in the kitchen, preparing delicious meals for our family. One of my favorite dishes that she made was called "Angelo Pandeli", a traditional Italian pasta dish. It's a simple but flavorful dish that always brings back fond memories of my childhood.
Ingredients:
- 1 pound of pasta (any type will do)
- 1/2 cup of olive oil
- 1/4 cup of chopped onion
- 2 cloves of minced garlic
- 1 (28 ounce) can of diced tomatoes
- 1/2 cup of chopped fresh basil
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to the package directions.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the onion and cook until softened, about 5 minutes.
4. Add the garlic and cook for 1 minute more.
5. Stir in the diced tomatoes, basil, and Parmesan cheese.
6. Season with salt and pepper to taste.
7. Bring to a simmer and cook for 15 minutes, or until the sauce has thickened.
8. Drain the pasta and add it to the skillet with the sauce.
9. Stir to combine and serve immediately.
Tips:
- For a richer flavor, use a combination of different types of pasta, such as penne, rigatoni, and fusilli.
- If you don't have fresh basil, you can use 1/4 teaspoon of dried basil instead.
- You can also add other ingredients to the sauce, such as cooked ground beef, sausage, or vegetables.
- Serve with a side of crusty bread to soak up all the delicious sauce.
